A weeklong immersive journey into regenerative cooking, conscious eating, and food system transformation — hosted in the heart of Southwest France

 

Regeneration meets Gastronomy

Ecology comes from the Greek oikos (home) and logos (study): it’s the science of how we live in relationship with our environment.

In today’s world, food is one of our most powerful tools for shaping this relationship — socially, culturally, and ecologically.

The Ecology of Food Masterclass is an intensive, interdisciplinary experience at the intersection of gastronomy, ecology, and cultural transformation. It’s a space for chefs, educators, artists, and changemakers to reconnect with the why, how, and for whom we cook.

Set in our Treehouse Kitchen, a regenerative ecosystem co-created with my family in the countryside of Bordeaux, this experience combines hands-on culinary practice with deep reflection, academic knowledge, and connection to the land.

A Week of Connection, Creation, and Nourishment

  • Cook daily in our open-air kitchen with some of the finest ingredients in France

  • Share meals as ritual and celebration

  • Visit oyster farms, biodynamic vineyards, local farmers markets and food producers

  • Meet stewards of land, wine, and food, and learn from their practice

  • Participate in “Yoga of Food” meditations, tastings, and interdisciplinary challenges

  • Sleep among the trees — with optional accommodations available on-site
